Questions, plainly answered.

Everything we get asked most often — by buyers reserving an animal, farmers and producers selling one, processors running the harvest, and institutions on the donation depot. Nothing here is legal, tax, or medical advice — just how the platform actually works.

What am I actually buying when I "reserve a fraction"?
A real, identified animal that's still on a farm. You're claiming a fraction of the take-home meat — usually a quarter, half, or whole. The all-in price you see covers the farmer's per-lb rate, processing (cut/wrap/vacuum-seal), the kill fee (split across the animal), the condemnation insurance pool, and Protein Outfitters' platform fee. You pay a deposit at reservation and the balance before pickup.
How does pricing work — is it $/lb live, hanging, or cuts?
All listings are priced in $/lb hanging weight — the industry standard. Hanging weight is the dressed carcass after the head, hide, and viscera are removed. After cut and wrap, you typically take home roughly 65–72% of hanging weight in finished cuts depending on species, bone-in choice, and grind ratio. Each listing's "What's included" breakdown shows both per-lb hanging and per-lb finished cuts.
How big a freezer do I need?
Rough planning rule for beef: 1 cubic foot per 35–40 lb of cuts.

· Quarter beef (~110 lb cuts) → 7 cu ft chest freezer
· Half beef (~220 lb cuts) → 14 cu ft chest freezer
· Whole beef (~440 lb cuts) → 22+ cu ft (or two smaller freezers)
· Whole hog (~140 lb cuts) → 7–10 cu ft
Can I cancel after I reserve?
Yes, with a window. Free cancel up to 21 days before drop-off. Inside 21 days, your deposit is forfeit and we offer credit toward a future reservation. Inside 7 days you owe the full balance because the animal is locked into the processor's schedule. The full Refund & Cancellation Policy is at /policies/refunds.
What happens if the animal fails inspection?
If a USDA inspector condemns the animal — pre-kill (ante-mortem) or during fabrication (post-mortem) — you get a refund. The condemnation insurance pool, which every reservation contributes a small per-lb amount to, makes you whole and covers the processor's kill fee so the loss doesn't fall on the farmer either. Pool balance and event history are public at /policies/refunds.
Do I have to fill out a cut sheet?
No. If you skip it, your share gets the "Processor's Choice" package — a balanced default of steaks, roasts, and ground in standard sizes. If you want to customize, our two-tier cut sheet lets you set Order Defaults (steak thickness, roast size, grind ratio) and then override per sub-primal if you care about specific cuts.
How do I pick up?
Pickup at the processor is included in your all-in price for buyers within typical local range. Some metro areas qualify for same-day local delivery (in evaluation). Long-distance buyers can order insulated dry-ice shipping; the option appears in checkout when applicable.
Is the meat USDA-inspected?
Every animal sold through the marketplace is processed at a federally-inspected (USDA) plant or a state-inspected plant for in-state sales where allowed. Look for the establishment number in the listing. Custom-exempt processing is not eligible for retail sale and isn't allowed on the platform.
Why isn't the animal I want showing up anymore?
Three possible reasons: it sold out, it was removed by the farmer, or it was donated through the Donation Depot to a qualified school / food bank / government feeding program. Once a fraction is donated, it's removed from public listings.
